(For cold winter days, like today.)
6 cups sliced potatoes (5 large)
1 med. onion chopped fine
6 slices bacon
1 1/2 t. salt
1/4 t. fresh ground pepper
4c. milk
4 t. unsalted butter
Finely shredded Cheddar Cheese
Parsley sprigs
Saute bacon until crisp in skillet. Drain on paper towels. Crumble. Saute onion in bacon fat until tender. (do not brown)
Combine potatoes, onion, bacon, salt, pepper, milk and butter. Simmer for 30 minutes. (do not boil). Garnish with shredded Cheddar Cheese, and fresh parsley right before serving.
